I’ve created this new variation of my Chia Fresca that’s even more nutritious, and has a wider range of flavor possibilities. I ran out of oranges one day and had to come up with something. Traditionally, ceviche made with raw fish, marinated in lime juice with chopped up vegetables like tomato, cucumber, onion, cilantro, and grated carrot. It’s served on a tortilla, and often garnished with slices of avocado which make it really delicious. This is a vegan version, that’s very quick to make and equally delicious. Chia Fresca: Chia and Apple Cider Vinegar Tonic

This is my new morning drink ritual. I love it! When I wake up in the morning I can feel that I’m dehydrated. I think it happens to all of us naturally when we sleep. Chia seeds are great for stamina and, when soaked in water like this, they become very hydrating. This is an easy way for me to incorporate apple cider vinegar into my daily diet too. This drink is so delicious and hydrating it’s addictive. You can easily play around with the flavorings, especially with the wonderful variety of flavored liquid stevia available now. Gluten Free Banana Chocolate Chip Bread

Here’s another banana bread recipe that’s gluten free, wheat free and grain free. It’s adapted from the Nourished Kitchen Guide to Grain-free, Dairy-free Baking, Sweets and Treats. I made this for some friends and they loved it. I didn’t have chocolate chips, and they are very hard to find there (in Mexico). So instead I bought a bar of milk chocolate and cut it into ‘chip’ sized pieces with a chopping knife. I actually prefer my ‘homemade chocolate chips’ to commercially bought ones because they taste better and you have the option of choosing to use healthier chocolate. Quick and Easy Savory Quinoa

Quinoa, like most grains, is a little bit boring by itself. Add some spices and a little coconut oil though and you can transform it into something that could be eaten all by itself. Well, I can at least. I make this in my little rice cooker. Rice cookers are just perfect for cooking quinoa too. They automatically turn the temperature down to warm when the quinoa is perfectly cooked. And you don't have to worry about them boiling over as long as you don't fill them too close to the top. This almond flour banana bread is moist and delicious. It's not only wheat-free, gluten-free, grain-free, but dairy-free as well. I can't even tell that this banana bread is not made with wheat flour, at least by taste. My taste testers couldn't either, and they loved it.
