Making Kefir Cheese

Kefir Cheese

Making cheese from kefir is easy and it contains all the beneficial probiotic micro-organisms that kefir is famous for. This recipe makes a tasty, soft cheese, similar to cream cheese but even easier to spread. I’ve also used it in recipes in place of ricotta cheese. This is the basic recipe for making a plain kefir cheese, you can use it as-is or add herbs, fruit and nuts to create your own delicious variations. Let your imagination go wild! Read more »

Chocolate Almond Sesame Halva

Raw Chocolate Sesame Almond Halva Balls

Since seeing how popular my first Raw Sesame Halva recipe has become I have been intending to make a chocolate version. But there’s nothing like a food craving to actually propel me into action. I didn’t have enough sesame seeds on hand to make a worthwhile batch, so I used almonds to make up the difference. I also added maca powder for even more superfood goodness and a bit of finely ground coffee beans for an extra kick which sent the taste over the top into the heavenly realm. The base of this recipe is quite simple – sesame seeds, almonds and honey. Around that you can be a bit flexible with the ingredients. If you don’t have raw cacao powder (raw chocolate) you can use unsweetened cocoa powder instead. The coffee and maca, or other superfood powder can be left out and it’s still delicious. I’d also like to try this using spirulina as the superfood powder ingredient, though I [...] Read more »

Rosemary, Garlic and Walnut Kefir Cheese

Rosemary, garlic, walnut kefir cheese on a flax cracker

This is a beautiful, tangy, silky-soft cheese perfect for spreads and dips. With just a few simple ingredients, it’s very quick to make up if you have already strained the kefir through cheesecloth to make the cheese. Since it’s made from milk kefir, it has all the healthy probiotic benefits of kefir, but the cream cheese-like consistency makes it so much more versatile. It would be a great dish to bring to potlucks and picnics. It’s a delicious and refreshing addition to sandwiches, on crackers or as a dip for vegetable sticks. Read more »

Making Kefir Yogurt

Fresh Kefir Grains

Kefir is a traditional fermented food made from milk, full of beneficial probiotic bacteria and yeast. It’s similar to yogurt, but usually more tangy, and sometimes slightly effervescent. Kefir is not only far more beneficial than yogurt, but much easier to make. Unlike yogurt, kefir can actually colonize your gut with the beneficial micro-organisms you need to have a healthy immune system and well-functioning digestive system. While high-quality yogurt contains a few of the beneficial gut bacteria, kefir contains a much larger number of beneficial bacteria, as well as beneficial yeasts. Kefir is great eaten by itself or with fruit, in smoothies, on muesli and granola, in salad dressings, made into cheese or even tasty fruit flavored popsicles that kids will love. Read more »

Healthy Oat Biscuits

Healthy Oat Biscuits - a.k.a. Oatcakes

I was introduced to oatcakes while living in London. I’ve been hooked ever since. Oats are the healthiest of all the grains, according to The 150 Healthiest Foods on Earth (that’s grains only, not including the seeds such as quinoa and amaranth), so they have a lot more going for them than their beautiful, nutty flavor. This recipe is wheat-free, vegan, low salt and contains no added sugar. They are great to snack on as is, delicious spread with honey, or would be great served with savory pates or herb kefir cheese and sprouts. It’s taken me years to get around to making my own, but they are so quick and easy to make I’ll definitely be making more soon. Read more »

How to Make Sauerkraut

How to make sauerkraut

I love sauerkraut (well I love cabbage in general, but that’s another story), and I know that ‘real sauerkraut’, i.e. homemade sauerkraut, is full of not only all the nutrients and phytochemicals that make cabbage a superfood but it contains probiotics as well. It tastes great and it helps with digestion too, well that’s what I notice anyway. The store-bought variety may in some cases taste good, but it’s not that healthy for you, and it’s expensive. It usually has way too much salt, not necessarily good salt at that. And in most cases it’s pasteurized, which means all the healthy probiotic bacteria that make sauerkraut so much more awesome and easily digestible than just plain cabbage have been killed off. Along with most of the nutrients I imagine. Mind you, you could do far worse as far as food choices go. But why settle for mediocre? Why not choose awesome? You’re worth it. Read more »

Creamy Vanilla Vegan Smoothie Shake

Thick & Creamy Vegan Vanilla Shake

I wasn’t sure whether to call this a shake or a smoothie, because it reminded me so much of a vanilla milkshake so I opted for calling it both. This is one of the best smoothie (shake) recipes I’ve come up with so far. I was actually going to call this a breakfast smoothie until I decided to have it for dinner too because I enjoyed it so much. This is one of those quick and easy smoothie recipes that is just so delicious and nutritious that there’s no excuse not to make it any time you need a quick meal or pick-me-up. Vanilla, honey, maca and lucuma are all superfoods. Sesame seeds have more protein than any other seed or nut, are loaded with calcium, iron, and magnesium. Plus they contain lignans that can help burn fat. Flaxseed (also called linseed), is high in omega-3 fatty acids, antioxidants, and fiber. Oats are the king of the grains, they help [...] Read more »
