    Is coconut healthy?

Yes! Both coconut and coconut oil are incredibly healthy for you. It's so good for you in fact that Jonny Bowden author of The 150 Healthiest Foods on Earth calls coconut, and its oil a superfood. Coconut oil has gotten a bad rap because it's a saturated fat, unusual for a plant-derived oil. Studies going back as far as the 1960s have shown that people living on the islands of Tokelau and Pukapuka, whose diet traditionally consists of a very high percentage of saturated fat from coconut oil are amazingly healthy. They are lean, healthy and cardiovascular, kidney and degenerative diseases are virtually unknown.

"A 1/2 cup of shredded coconut meat has almost 4 g of fiber, 142 mg of potassium, 13 mg of magnesium, less than 3 g of sugar, and - most important - 13 g of the most heart-healthy, life-supporting fat on the planet."

Should apples be cooked first when making crumble?

    No. Here’s why…

Whether you are using a crock pot or a traditional oven, the other ingredients will need time to cook, so the apples will have time to cook as well. I think that cooking the apples in the crumble with the rest of the ingredients enhances the flavor as well, the apple juice that comes out in the cooking will be absorbed by, and help cook some of the oats. And the apples cook just beautifully nestled within the oat crumble.

If you want the apples in your crumble to cook faster, try grating them instead of slicing. It provides a nice change in texture if you are just looking for a variation on the traditional apple cinnamon crumble recipe.
