Kefir is a delicious tasting probiotic milk product, similar to yogurt but with even more health benefits. It’s also much easier to make than yogurt, you just add milk to the grains, and leave it out to ferment at room temperature. Kefir has creamy consistency similar to runny yogurt with a sour, slightly yeasty, slightly effervescent quality that’s quite refreshing, especially when served chilled.

Kefir can be used in the same way you would use yogurt… it’s great in smoothies, over cereal or granola, on fruit, or blended up with your favorite fruit and frozen into popsicles (great way to get healthy probiotic bacteria into kids!). Or try blending it with peaches or mango for a refreshing Indian lassi.

It can also used in place of buttermilk for baking. Or you can just drink it straight. It can also be used to make quick and delicious soft cheeses (similar to cream cheese, ricotta, quark), just pour it into cheesecloth and strain the whey out.

Benefits of Kefir

Kefir is a fermented, probiotic milk drink, similar to, but even more beneficial than yogurt. Unlike yogurt, kefir can actually colonize the beneficial bacteria in your gut, so it’s great for maintaining health, but especially useful in re-establishing your body’s ecosystem if you’ve been on antibiotics or any other medication that destroys the friendly bacteria in your gut. Because it’s fermented, kefir is much easier to digest than milk. Some people with lactose intolerance are able to have kefir without any issues.

Kefir originally comes from the Central Asian Caucasus mountains, where the people are renowned for living long, healthy lives.

Kefir has active cultures of both friendly yeast and friendly bacteria (including Lactobacilli) which are not only beneficial, but crucial to the healthy functioning of the digestive system (your inner ecosystem). They help your body to eliminate the unfriendly yeast and bacteria that’s in your colon, keeping your body’s ecosystem clean and functioning well.

The live cultures in the kefir create B vitamins such as B1, B2, B6, B12, niacin and folic aside as they go through their life cycle. It also contains vitamins A, D, and lactic acid.

How To Make Kefir:

Kefir grains will ferment and grow in any mammal milk (e.g. cow, goat, sheep) either raw or pasteurized. People have also had success using reconstituted powdered milk.

You just add the kefir grains to milk in the ratio of 1 tbsp grains to 1 cup milk. Leave at room temperature for 12-24 hours (depending on the temperature). You then strain out the grains, use or refrigerate the kefir, and reuse the grains in the next batch.

The grains will grow over time, allowing you to make larger batches of kefir if you wish. Any excess grains can be eaten (they remind me of slightly tart gummy bears), stored in the fridge or frozen for longer-term storage and backup.
