Creamy blueberry coconut smoothie

Today I decided to take a break from my usual green smoothie for breakfast and go with an all-fruit smoothie. I recently cracked open a couple of fresh coconuts, and I still had some coconut water left, so I decided to use that, as well as some of the coconut flesh. The result was a beautiful, creamy, fruity smoothie with a hint of vanilla. Blueberries and coconuts are both superfoods. Blueberries are considered one of the best foods for fighting free-radicals and repairing cell damage thanks to the anthocyanins they contain, which also give them their blue color. They also have anti-inflammatory properties, protect against dementia and are great for the eyes and memory, especially as we get older. Coconut Rice

Coconut Rice

If you’re lucky enough to get fresh coconut, save the juice and use it to make coconut rice. I used the juice from a mature coconut, but you could also use the juice of a young Thai coconut as well. The coconut juice adds a delicate, sweet flavor that compliments just about any dish. It’s great with stir-fried vegetables, or marinated tofu or tempeh. How To Crack A Coconut

Fresh coconuts are so much nicer than the dried coconut you get in the shops. I love eating slices of fresh coconut, but it’s also a real treat to use the coconut juice in cooking. I even slice it really thin by hand and put the pieces in the dehydrator. It’s so much nicer tasting that anything you buy in the stores it’s worth the extra effort.
